FFD301 BASIC FOODS: This course is an introduction to nutrition and meal planning, food preparation, and basic kitchen procedures. Recommended for ninth or tenth graders who may be interested in a culinary arts career. (half year - ½ credit) Open to grades 9, 10, 11, & 12.
FWF601 WORLD FOODS: Cooking techniques and cultures from around the world are explored. Cuisine from Italy, Mexico, Africa, Latin America, India, and Israel will be studied (and others depending on interest of the students). Highly recommended for students who may want to pursue a career in culinary arts. Prerequisite: FFD301. (half year - ½ credit) Open only to grade 10.
FGC861 GOURMET COOKING (T): This accelerated course includes specialties in foods and excellence in preparation and presentation. It is strongly recommended for eleventh graders who may be interested in a career in culinary arts and is not to be taken during the same semester as Basic Foods. This course is a prerequisite for Restaurant Management. (full year - 1 credit) Open to grades 11 & 12.
FRM871 RESTAURANT MANAGEMENT: Practical applications of running a restaurant, the Brickview Inn. Students take part in menu planning, inventory, food purchasing, preparation, serving, and managing. The entrepreneurial process includes decision-making and problem solving. Some catering activities may be included. Prerequisite: FGC861 and permission of instructor. (full year - 1 credit) Open to grade 12.
FIS861 EARLY CHILDHOOD EDUCATION (T): Students work independently on various topics and projects in the developmental and learning stages of young children. They are required to observe a local Montessori class and other early childhood facilities. Other activities outside of school may be required. Prerequisite: FGD601 or permission of teacher (full year - 1 credit) Open to grades 11 & 12.
FHD301 HUMAN DEVELOPMENT (T): An introductory course, this class involves studying human development from the prenatal stage through adulthood. (half year - ½ credit) Open to grades 9, 10, 11, & 12.
FIF704 INDIVIDUAL & FAMILY DEVELOPMENT (U): Students gain an understanding of individual and family development within the context of the family system and the changes that occur within family systems over time. Job shadowing and/or internship is required. Prerequisite: permission of instructor (full year - 1 credit) Open to grades 11 & 12.
FGD601 CHILD GROWTH & DEVELOPMENT (T): Emphasis is on awareness of developmental stages of the child from infancy through school age. Included are career opportunities and concepts of parenting. (full year - 1 credit) Open to grades 10, 11, & 12.
